This is a versatile basic soup recipe. I will show you how you can add a few different ingredients and make 4 different soups.
The basic Vegetable Soup:
In a large soup pan, sauté leeks and garlic until soft. Add water, canned tomatoes, celery, sweet potatoes, apples, carrots and bouillon cubes. Bring to a boil and then reduce heat. Cover and simmer for 30 minutes. Add cabbage, green beans, salt and pepper. Bring to a boil and then reduce heat. Cover and simmer 30 minutes. Add parsley and lemon juice and cook covered for another 10 minutes.
Tip: chicken broth or vegetable broth can be substituted for the water and bouillon cubes.
- 2 leeks, thinly sliced
- 1 and ½ teaspoon minced garlic
- 1 teaspoon olive oil
- 1 14 ounce can stewed tomatoes
- 3 stalks celery, sliced
- 3 carrots, sliced
- 1 sweet potato, peeled and cubed (optional, use a regular potato instead)
- 1 apple, peeled and chopped
- 4 bouillon cubes
- water to cover all ingredients, plus 1 more cup
- 2 cups shredded cabbage
- 1 cup fresh green beams, sliced
- Salt and pepper to taste
- 2 tablespoons lemon juice
- Fresh or dried parsley to taste
This is a delicious soup for either a side dish or a meal.
This 4 quart sauce pan would be wonderful to cook this in as the flavor of each vegetable will come through because of the stainless steel.

Italian Ham and Vegetable Soup
Prepare the basic vegetable soup and add a can of white beans and 1 to 2 cups of chopped ham.
Also substitute balsamic vinegar for lemon juice. Add 1 tablespoon oregano. This sweet and hearty soup will satisfy your appetite for lunch or dinner.
Simply prepare the basic soup recipe and add 2 cups of chopped cooked chicken. Also, add 1 cup corn.
This is a favorite chicken soup of children (big and small!) You could also add some of your kid’s favorite pasta. Cook first and then add to the soup. My kids always love the bow-tie pasta. Change it up by adding their favorite to make it special for them.
Asian Vegetable Soup
This is really delicious if you love Asian food, as I do. I was always intimated to try and cook an Asian meal, but this is simple, healthy and delicious. Do yourself a favor and try this recipe!
After making the basic soup recipe, add ½ cup quick cooking rice and ½ cup water. Substitute rice vinegar for the lemon juice. Also add 1 cup thinly sliced mushrooms and 2 sliced green onions.
This is the perfect recipe for the busy person. You can make the basic soup and then make 2 different soups from it for variety. Or have soup night and serve two different soups from the basic soup recipe. Your creativity is only limited by your imagination.
