When buying the corned beef, buy a larger piece than what you think you will need as it shrinks a lot. Some people prefer to soak the corned beef in water for about an hour to help remove any excess salt. Corned beef is a piece of beef—usually brisket—that is brimmed. This means it has been prepared with a lot of salt and spices. After removing it from the water, make sure to pat dry.
A fast and easy way to cook corned beef is to prepare the beef by rubbing it with the packet of spices that is usually included. Next, line the slow cooker with sliced onions on the bottom. Then place the corned beef on top of the onions. Pour over the corned beef a bottle of beer. Beer at room temperature is best. Cook on low for 8 to 10 hours. Serve hot on hamburger buns for a delicious treat or serve cold with horseradish sauce.
If you want another flavor, remove the corned beef from the slow cooker about an hour before serving and drain all the liquid out of the cooker and remove the onions. This is also a good time to cut off any excess fat. Try the following glaze:
- 1 tablespoon brown sugar
- 1 tablespoon water
- 1 t. soy sauce
- 2 t. paprika
- ½ t. ginger
Return the corned beef to the slow cooker and put the glaze over the beef. Cook on low for about 30 minutes.
Corned Beef can either be shredded or cut thinly on the diagonal.
Corned Beef and Cabbage
Prepare the meat as stated above. First soak it for an hour in water and then pat dry. Rub with the seasoning packet.
Line the slow cooker with sliced onions. Place the corned beef on top of the onions. On top of the corned beef place your favorite vegetables (carrots, parsnip, turnips, and beets). Add about 3 cups of water (you can also use chicken broth or vegetable broth for a richer flavor). Cook on low for 8 hours. About an hour before serving you can add cabbage wedges and potatoes. If they cook from the start they may turn into mush. This is also a good time to add any fresh herbs you may like (parsley, dill and thyme are very good).
When cooking is complete, remove the vegetables and place around the edge of a platter. Remove the corned beef and slice thinly and place in the middle of the platter. Do not use the onions on the bottom of the slow cooker. If you want onions to serve on the platter, add them with the potatoes and cabbage. Make the following mustard sauce and pour over the corned beef.
Combine 1/3 cup prepared mustard and 1/3 cup honey. Thoroughly mix together before pouring over corned beef.
