Pumpkin Pie Pudding

Skip the pumpkin pie this year with this new twist.  It is warm and yummy and will satisfy everyone’s sweet tooth.  And if you are the cook—it is easier than rolling out a pie crust.  You can even use it as a breakfast on a holiday morning.  There are a couple of variations so you can make it exactly the way your family will enjoy it the most.

This is so simple and easy to make, that the kids could make it.  Just make sure everything is set correctly on the slow cooker and it is plugged in.

This recipe is best in a 4 quart cooker.  If you have a larger cooker, try doubling the recipe.

Spray the inside of the cooker with a cooking spray.

  • 1  15 ounce can pumpkin
  • 2/3 cup evaporated milk
  • 1/3 cup sugar
  • 1 tablespoon pumpkin pie spice

Stir all the ingredients together and spread evenly in the bottom of the liner of the slow cooker.

In a bowl, mix together:

  • A one layer size yellow cake mix
  • 1 cup pecans or walnuts (optional)
  • 1 tablespoon pumpkin pie spice

Sprinkle mixture over the pumpkin mixture in the slow cooker.

Drizzle ¼ cup butter over the mixture in the cooker.

Cover and cook on high for 2 hours and 30 minutes.

Remove the liner from the cooker, take off the lid and cool on counter top for 30 minutes.

The nuts are optional. If anyone in your family or guest are allergic to nuts, it will still turn out delicious.

It can be served alone or with whipped cream, ice cream, or a dessert topping.

Place chocolate chips and miniature marshmallows on top just before placing the lid on.

It can also be cooked on low for 6 hours

Brown sugar can be substituted for white sugar

If you don’t have a pumpkin pie spice you can make your own by mixing together 2 tablespoons each of ground cinnamon and ground nutmeg and 2 teaspoons each of ground cloves and ground ginger.

This also tastes great served cold.

Another substitution for the yellow cake mix would be a buttermilk baking mix (Bisquick)  and 2 eggs.

As mentioned before, this can be served as a breakfast or dessert.  If you live in the North and like to go ice skating outdoors, this is the perfect treat to be waiting for you when you come in from the cold.
