You will not believe how delicious this chicken will turn out. Although it is not technically a “one pot meal”, it is so super fast and delicious that it is something great to cook and take to a pot luck dinner or as a wholesome quick meal for your family. It will probably replace the conventional method you use for cooking a whole chicken. It is quick, healthy, and delicious.
If using a stove top pressure cooker on high pressure the approximate cook time after pressure is reached will be 15 minutes and the low pressure cook time is 30 minutes. Make adjustments for your individual pressure cooker. This larger pressure cooker is ideal for cooking a whole chicken.
Mix together in a small bowl the following fresh herbs:
- 1 tablespoon rosemary
- 1 tablespoon thyme
- 2 tablespoons parsley
- 2 minced cloves garlic
- 1 finely crushed bay leaf
Rub ½ of the mixture in the cavity of the chicken. Tie the chicken legs together and tuck under the wings.
Heat 2 tablespoons olive oil in the pressure cooker and brown chicken on all four sides.
Sprinkle the chicken with salt, pepper and the remaining herbs. Turn chicken breast side down. Add 4 tablespoons of white wine, water, or chicken broth. Add two slices of onion and some cut up carrots. Close the lid and slowly bring to pressure. Cook for allotted time and let pressure release – Yum.
