This stew recipe is good enough to serve to any guests. It is both elegant and delicious. It can be cooked in this pressure cooker for maximum flavor.
- 3 potatoes
- 3 ½ pound chicken
- 2 bacon slices
- ¼ pound mushrooms
- 10 pearl onions
- 1 teaspoon flour
- 1 tablespoon brandy
- ¼ cup white wine
- ½ cup chicken broth
- Truffle bits (optional)
Peel 3 potatoes and either cube or cut them with a melon scoop into small balls.
Either cut up a 3 ½ pound chicken or buy chicken pieces already cut up. Salt the chicken.
Cut up 2 slices of bacon into one inch pieces. Place bacon in the pressure cooker and cook. Remove the bacon while leaving the bacon fat in the pan.
Add potatoes in the pan and cook until golden brown. Remove the potatoes and keep until later.
Lightly brown chicken pieces on all sides in the pan and remove and keep until later.
Add one fourth pound mushrooms and 10 small pearl onions and sauté in pan for about two minutes.
Sprinkle in one teaspoon flour and one tablespoon brandy. Mix well.
Add one fourth cup each of white wine and chicken broth.
Return to the pressure cooker the bacon, chicken, and potatoes.
Seal the lid and bring to pressure. If using a stove-top pressure cooker cook on high pressure for 8 minutes, on low pressure for 16 minutes. Wait until pressure is released before opening.
Garnish with truffle pieces.
