Here’s all you need:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 leeks, washed and chopped
- 1 pound potatoes, peeled and cubed
- 3 tablespoons parsley
- 1 teaspoon garlic powder
- 4 cups water or chicken broth
- 1 cup milk
- Salt and pepper
Heat the olive oil in the pressure cooker and then slowly sauté the chopped leeks and onions until transparent. Add potatoes, parsley, and garlic powder. Stir in the milk and water or chicken broth. Season to taste with salt and pepper.
Seal the cooker and bring to pressure. Cook on high for 10 minutes or low for 20 minutes. Wait until the pressure is released and remove the lid. Cool for 10 minutes. Use an immersion blender in the pot until soup is a creamy consistency. Or transfer to a blender and puree. This soup is equally good hot or cold. Sprinkle with a little fresh parsley and croutons.
