This is a popular Italian way to cook pork. The milk tenderizes the meat while cooking. As the milk evaporates, it combines with the juices of the meat and makes a delicious sauce. It is amazing how easily it is to make such a delicious meal.
- 1 1/2 pound pork tenderloin
- 1 cup milk
- 1 clove garlic
- 1 tablespoon parsley
- Salt and Pepper to taste
- 1 teaspoon rosemary or your favorite herb
- 3 tablespoon olive oil
- Trim visible fat off of pork tenderloin.
- Peel and mince garlic clove
- Mince parsley
- In a bowl, combine milk, garlic, rosemary, salt, and pepper.
You could cook this pork tenderloin in either a stove top pressure cooker or one of the electric pressure cookers. I personally would use a stove top. I would recommend the Kuhn Rikon Pressure cooker if you are looking for top of the line pressure cooker.
Add olive oil in pressure cooker and heat.
Sear pork tenderloin on all sides.
Pour liquid mixture on top of pork tenderloin.
Close and lock lid of pressure cooker.
Bring to high pressure.
Once it reaches high pressure, reduce heat to keep pressure on low setting.
Cook 20 minutes.
Remove from heat and use quick release method.
Remove lid and remove pork onto a tray. Cover to keep warm.
Place pressure cooker back on stove (without the lid) and bring heat to a medium high. Constantly stir sauce until it thickens.
Slice pork tenderloin and pour sauce over it. Sprinkle with parsley.
