Meatball Stew in the Pressure Cooker

This is a family favorite because it is so delicious and doesn’t break the budget.  This amazing one pot meal will fast become an asked for favorite.

For meatballs:

  • meatball stew in pc1 ½ pound ground meat
  • 1 egg
  • 2 slices white bread
  • 2 tablespoons parsley
  • 2 cloves garlic
  • ¾ cup chicken or beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon nutmeg
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • ¾ cup frozen or fresh peas
  • 2 cut up carrots
  • 2 potatoes, peeled and cubed
  • ¼ cup white wine
  • 1 bay leaf

Mix together in a large bowl 1 ½ pounds of ground meat.  Or use a combination of meat, pork, and veal.  Add 2 slices of white bread that has been soaked in water and then squeezed out. Add one slightly beaten egg.  Add the following herbs and spices:  parsley, garlic, pepper, paprika, and nutmeg.

Mix in 1 teaspoon Worcestershire sauce and 1 tablespoon chicken or beef stock. Form into 2 inch meatballs.  Dust meatballs lightly with flour and brown on all sides in the pressure cooker with a small amount of oil.

Add the following vegetables:  peas, carrots, and potatoes.  Add stock, wine, and bay leaf.

Seal the lid and bring to pressure.  If cooking on high pressure cook for 5 minutes.  On low pressure the cooking time will be 10 minutes.  After pressure is released and the lid is opened, remove the bay leaf.
