Once you make this meal—it is a sure thing that it will be a repeat. The aroma of it cooking will make your mouth water all day. This is great for the holidays because it is so festive looking and everyone entering your home will love it. It’s not only very delicious, but satisfying and healthy.
This recipe is made with chicken breast and chicken sausage. The sausage adds flavor. You could also use chicken thighs instead, or a combination of breast and thighs. Any other type of meat can be substituted. Beef that has a little marbling in it is also popular. If you use a meat without marbling, it is a good idea to add a little sausage.
So let’s get started on this succulent meal:
Coat the inside of your slow cooker with a thin layer of cooking spray. A 6 quart crock pot will work well for this recipe.
- Start with a layer of ½ onion thinly sliced
- Top with another layer of 2 carrots thinly sliced
- Mix together one 10 ounce boneless chicken breast, cubed, and one 9 ounce package of cooked chicken sausage, sliced.
- Layer the meat mixture over the carrots.
- Mix together one green pepper, which has been seeded and sliced, and one large zucchini that has been cubed into ½ pieces.
- Top the meat mixture with the vegetable mixture.
- Mix together:
- 1 1/2 cup chicken broth
- 2 14 ounce cans of Italian stewed tomatoes
- ¼ teaspoon dried rosemary
- ¼ teaspoon dried oregano
- 1 clove of garlic, finely minced
Pour liquid mixture on top of ingredients in crock pot.
Cook on low for 7 hours or high for 4 hours.
Remove lid and add a can of cannellini beans and then recover the crockpot and cook on high for 15 minutes, or until beans are thoroughly heated.
Ladle the stew into bowls and garnish with fresh basil.
If you want a little kick to this meal add spicy chicken sausage. Most adults will love this, but children might not.
If you’re in a hurry, use frozen carrots and frozen onions. Or many grocery stores have the fresh variety that are packaged and pre-cut for convenience.
Yellow or orange pepper can be used instead of the green. I like to use a half of a yellow and a half of an orange during the holidays because it makes the plate look festive.
You can increase the amount of dried seasonings or use an Italian seasoning mix instead.
Seared chicken cubes will add another dimension of flavor to this recipe.
If the chicken breast is small, just increase the amount of sausage.
The vegetables can be beefed up by adding more of your favorite vegetables.
Any type of sausage can be used—beef, turkey, or pork.
If you want a more southern taste, just substitute the Italian seasonings with Creole seasoning and serve with rice.
As you can see, the basic recipe is in and of itself delicious, but you can add, delete, or change the ingredients to fit the taste of whoever you may preparing this meal for. It can also be changed around if you don’t happen to have all the ingredients.
