This is a “must try” recipe. It will quickly become a family favorite. This is one of the easier versions of this Chinese soup. It is especially good if you have a cold or a sinus infection. Make a huge pot of it because it freezes well to always have on hand during the winter. Hot and sour soup is like chili, every family has their own favorite recipe. So start with the following recipe and adjust it to your family’s taste.
4 cups chicken broth
3 tablespoons soy sauce
¼ cup sliced mushrooms
½ tablespoon garlic chili sauce
¼ cup shredded chicken or pork
Bring the above ingredients to a low boil and reduce and simmer for 5 minutes. Add the following ingredients:
¼ teaspoon white pepper
¼ cup white vinegar
1/3 cup canned bamboo shoots
3 ounces of diced tofu
After adding the above ingredients, simmer for 5 minutes.
Add cornstarch mixture to the soup and simmer for 5 more minutes. Cornstarch mixture: 2 tablespoons cornstarch and 2 tablespoons water mixed together until smooth paste is formed. Slowly pour the mixture into the soup and stir constantly until all is blended well.
Add 1 egg to soup: beat an egg in a cup. Slowly add egg to soup while stirring (as in egg drop soup). After 1 minute add:
2 diced green onions
½ teaspoon sesame oil
Stir well and remove from heat. Serve while hot.
If you want it a little spicier add some garlic powder or garlic and a little more chili sauce.
You can substitute turkey or shredded beef for a different meat. Or you can substitute shrimp for the meat.
If you want to make the soup a little heartier; add some shredded cabbage and/or carrots.
You can make your own chicken broth by using fresh chicken.
Another way to make chicken broth is to use chicken bouillon cubes in boiling water.
Another substitute for chicken broth is to make a pork broth by boiling a piece of pork.
If you are a vegetarian or you are having a meatless day you can use vegetable broth and not add any meat. This is still very delicious!
Add lentils to make this soup hearty and healthy.
Adding water chestnuts is a favorite addition for many that like their texture.
As you can see, this is an easy soup that can be made to fit the taste buds of those in your family. Make the basic recipe and then experiment by adding your favorite additions. You can even make this soup by leaving out some of the ingredients, such as the tofu, bamboo, meat, and sesame oil, if your family doesn’t like it or you don’t have the ingredients on hand. It will be a soup you will make over and over again. And best of all, it doesn’t have MSG in it which a lot of restaurants add.
