This delicate and delicious cheese cake goes with any holiday meal. The hint of lemon makes it light and refreshing with any topping you want to add. It is mixed in a food processor–so it is quick and easy–what more could you want?
One thing I particularly like about it is that when in the midst of all the holiday cooking and you are in a rush, you don’t need your oven. This is cooked while you are baking other things in the oven– in the pressure cooker. It will turn out so moist and delicious that you will probably never use the oven again to make a cheese cake.
- 1 Tablespoon butter
- 6 Tablespoons cookie crumbs
- 2 8 ounce packages of cream cheese
- 3/4 cup sugar
- 1/4 cup heavy cream
- 2 teaspoons vanilla
- 2 teaspoons lemon zest
- 2 Tablespoons flour
- 6 Tablespoons flour
- 2 eggs
- 2 egg yolks
- Butter edges of springform mold or any pan suitable that will fit into the pressure cooker.
- Sprinkle with cookie crumbs and set aside.
- In a food processor–blend following ingredients: cream cheese, sugar, cream, vanilla, lemon zest, flour, and sour cream.
- Beat into the blended mixture 2 eggs and 2 egg yolks.
- Pour into prepared bowl and totally wrap in foil.

Add 2 cups of water in the pressure cooker.
Place foil encased mold on cooking rack or in a cooking basket and lower into pressure cooker.
Close and lock lid.
Bring to high pressure.
Reduce heat under the pressure cooker and stabilize pressure on low for 45 minutes.
Remove from heat and use natural release method.
Remove cheese cake from pressure cooker and loosen foil and let cool. Chill overnight in refrigerator.
Spread fruit preserves in a thin layer over cheese cake.
