Glorious One Pot Meals

Elizabeth Yarnell has introduced a new way of cooking in the Dutch oven called infusion cooking.  She has introduced this new style of cooking in her book  Glorious One-Pot Meals: A Revolutionary New Quick and Healthy Approach to Dutch-Oven Cooking. This is is a delicious, quick and healthy method.  She layers the ingredients and doesn’t constantly stir like the old method of Dutch oven cooking.

But you also get the advantage of cooking in a Dutch oven by having only one pot to clean.  She uses the enameled coated oven that is previously sprayed with a cooking spray so  cleanup is fast and easy.

Yarnell’s background in nutrition makes healthy eating a high priority.  So this is definitely a style of cooking that you will want to consider.  The heat in this type of cooking is higher than with the traditional slow cooking in a dutch oven.  Hence, most of the meals are finished in about  an hour or under.  Her combination of layering ingredients and cooking at a high temperature renders well-textured hearty meals that can be served every night of the week.

Her emphasis is on whole foods and abundant servings of vegetables.  She does use moderate amounts of meat and whole grains.  What I particularly like is that she encourages the reader into discovering their own special likes by incorporating them into the meal plan.  She is an advocate of healthy eating, but also thinks it is important to enjoy your meals  everyday.

Her own motivation for developing this type of healthy cooking is a personal one.  She was diagnosed with multiple sclerosis 10 years ago and since then has been on the road to figure out how to cook in a healthier manner.

I highly recommend you get a copy of her book.

Robin Miller, host of the Food Network’s Quick Fix Meals with Robin Miller gave this review of this cutting edge cookbook:

“When I hear ‘crisp vegetables, tender meats, incredible flavor, ONE pot, and ready in less than thirty minutes,’ I say COUNT ME IN! That’s my Quick Fix mantra! Who doesn’t cherish strategies that deliver wholesome, family-friendly meals in just minutes? All in one pot, which makes for easy cleanup. Glorious One-Pot Meals offers tons of variety, from the fabulously ordinary to the incredibly extraordinary.

Fish dishes range from Very, Very Mild Fish to Honey-Chili Trout and Pistachio Halibut (with lavender!). Elizabeth tempts you with All-American Pot Roast and Corned Beef and Cabbage and then wows you with Amaranth Chili. Ready to move beyond Simply Chicken and Chicken Marsala? Then try the African Peanut Butter Stew. Or leap from Glorious Macaroni and Cheese to Aloo Gobi (a flavor-packed, Indian feast). If you’ve got a pot, you’ve got a meal. There’s truly something for everyone.”

50 % of the reviewers (out of 121) gave this book the highest possible rating.  They loved this style of cooking and all the recipes they tried were delicious.

So, just use a little common sense and experiment with your favorite foods and I believe you will be more than happy with this cookbook.  It is a signature way of cooking that you definitely want to try out.
