Elizabeth Yarnell has introduced a new way of cooking in the Dutch oven called infusion cooking. She has introduced this new style of cooking in her book Glorious One-Pot Meals: A Revolutionary New Quick and Healthy Approach to Dutch-Oven Cooking. This is is a delicious, quick and healthy method. She layers the ingredients and doesn’t constantly stir like the old method of Dutch oven cooking.
But you also get the advantage of cooking in a Dutch oven by having only one pot to clean. She uses the enameled coated oven that is previously sprayed with a cooking spray so cleanup is fast and easy.
Yarnell’s background in nutrition makes healthy eating a high priority. So this is definitely a style of cooking that you will want to consider. The heat in this type of cooking is higher than with the traditional slow cooking in a dutch oven. Hence, most of the meals are finished in about an hour or under. Her combination of layering ingredients and cooking at a high temperature renders well-textured hearty meals that can be served every night of the week.
Her emphasis is on whole foods and abundant servings of vegetables. She does use moderate amounts of meat and whole grains. What I particularly like is that she encourages the reader into discovering their own special likes by incorporating them into the meal plan. She is an advocate of healthy eating, but also thinks it is important to enjoy your meals everyday.
Her own motivation for developing this type of healthy cooking is a personal one. She was diagnosed with multiple sclerosis 10 years ago and since then has been on the road to figure out how to cook in a healthier manner.
