Crock Pot Chili

Chili is a favorite in most households.  There are so many different variations of crock pot chili that you could probably make a different chili every night for at least a month.

crock pot chili 2The following recipe is a basic slow cooker chili recipe.  At the bottom of the recipe, there are a few options on how to make a different version.  The options are only to get you started on making your own variation that will suit the palette of you and your family or friends.

The “spice meter” is strictly up to you.  I suggest you make a mild chili and then slowly add the “heat”.  The heat can be in the form of more chili powder, red pepper flakes, diced jalapenos, hot sauce, or cayenne pepper.


Ingredients:

  • 1 ½ pound ground beef
  • 1 medium onion, diced
  • 1 28 ounce can diced tomatoes
  • 1 15 ounce can tomato sauce
  • 3 15 ounce can chili beans
  • 3 Tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 Tablespoon oil
  • 2 Tablespoons dried parsley

Prep Work:

  1. Dice onion.
  2. Add oil to fry pan and heat.  Add diced onion and cook until soft.  Remove to a saucer.
  3. In a fry pan, brown the ground beef. Drain the fat off the ground beef in a colander.    Add onion to ground beef and mix together.  Add chili powder, cumin, garlic powder, and oregano.
  4. In a blender, blend 1 can of beans.

Place all the ingredients in the crock pot and mix together.

Cook on low for 6 hours.

Serve with oyster crackers, corn chips, sour cream, grated cheese, chopped fresh green onions, and fresh herbs (cilantro is especially good) to top.

Options:

Ground beef can be substituted with ground turkey.

Also add chopped red or green bell peppers when cooking the onions.

Chuck steak, or any other steak, can be trimmed and cut into bite size pieces to be substituted for the ground meat.

Use 3 different type of can beans—red beans, kidney beans, black beans, pinto beans or any white beans.

A half bottle of beer can be added in with the ingredients.

Added Note: There are some slow cookers that have a browning feature so the meat can be cooked inside the cooker and then the remaining ingredients can be added.  Here is one of those cookers with the searing elements.
