Chicken Osso Bucco in the Slow Cooker

Osso Bucco

This Osso Bucco recipe is made with chicken thighs. The thighs are much more moist than a chicken breast and with the way they are prepared, they are still heart healthy. This Italian dish is usually made with a veal shank. Using the chicken thighs drastically reduces the calorie count, but you will find it can be just as delicious.

Calorie and Fat Content

One serving of this recipe is 1 chicken thigh and ¼ cup vegetables. One serving is only 150 calories. With the calories being so low you can afford to eat 2 servings, or you can add ½ cup cooked brown rice which will only add 110 calories. Hence, a double serving will be 300 calories or one serving with the rice will be 260 calories. As you can see, a large serving still has a very low calorie count. There are 6 total grams of fat, 2 grams of saturated fat, and 0 grams of trans fat in a serving.

This is normally a high calorie meal. The way it is cooked in the slow cooker with added tasty ingredients makes it just as delicious as the regular Osso Bucco.

Basic Ingredients:

  • ¼ cup reduced sodium chicken broth
  • 1 (14 ounce) can diced tomatoes
  • 1 small carrot
  • 1 small onion
  • 1 stalk celery
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 4 (5 ounce) chicken thighs
  • 2 cloves garlic
  • 4 sprigs parsley
  • 1 sprig Rosemary
  • 1 sprig Thyme
  • 1 bay leaf
  • 1 lemon

Prep Work:

  1. Cut carrot into ¼ inch pieces.
  2. Thinly slice celery.
  3. Finely chop onion.
  4. Finely chop 2 sprigs of parsley.
  5. Remove skin from chicken thighs. Trim chicken thighs of any fat.
  6. Make 1 teaspoon of lemon zest.
  7. Make a bouquet garni by placing 1 sprig each of rosemary and thyme in a cheesecloth bag. Also
    add 2 sprigs of parsley and 2 cloves of garlic. Also add 1 bay leaf. Tie closed.
  8. Make a parsley mixture by combining lemon zest and chopped parsley (2 sprigs).

Cooking method:

Combine broth, tomatoes, carrot, celery, onion, salt and pepper in the slow cooker.
Submerge the chicken thighs in the vegetable mixture in the slow cooker.
Place the bouquet garni down into the food in the slow cooker.
Cover and cook on low for about 5 hours.
Check and make sure chicken is done. If it is remove to a platter. If the chicken needs to cook longer,
cover and cook an additional hour.
After removing chicken, also remove bouquet garni.
Add parsley mixture into the vegetable mixture and stir.
Add vegetable mixture to chicken on platter and serve.

Notes:

This meal is cooked in a 5 or 6 quart slow cooker. Cuisinart makes a full line of slow cookers that we

The recipe could be doubled for a larger group, but a larger slow cooker would be needed and the
cooking time would need to be extended to about 8 to 10 hours on low.

Great served over rice, noodles, or mashed potatoes.
