This is a great vegetarian recipe by itself. Or it can be paired with the Chicken and Potato Dump Recipe as a perfect compliment to serve a large crowd. It can be made ahead of time and put in the freezer to bring out and cooked in an emergency. The possibilities are endless. And the best thing about it–It is Delicious!
8 ounces uncooked shell pasta
1 package frozen chopped spinach (broccoli can be substituted)
1 cup ricotta cheese
1 teaspoon salt
1 cup shredded mozzarella cheese
1 jar marinara sauce (meat sauce can be substituted)
1/4 cup grated Parmesan cheese
Thaw spinach and then squeeze dry.
Cook pasta 1 minute less than directions.
Whisk eggs in large bowl until blended.
Grate or shred any cheese that needs to be prepared.
Spray baking dish with non cook cooking spray.
Add marinara sauce, spinach, pasta, ricotta cheese and salt into egg bowl.
Pour into prepared baking dish.
Sprinkle with mozzarella and Parmesan cheeses.
Cover and bake at 350 degrees for 30 minutes.
Remove cover and bake an additional 15 minutes or until bubbly and hot.
You can substitute broccoli for the spinach.
You can also use a meat sauce (home made or bought) instead of the marinara sauce. Make sure meat is thoroughly cooked.
If you use a metal pan, line with foil to make clean up fast and quick.
