Barbecued Pork Chops and Beans

pork chops and beansThis is a recipe that kids and men love.  Cooks also love it because it is quick and easy and taste delicious.  For a complete meal add a salad, steamed vegetable, or potato.  The recipe serves four.  I love cooking pork chops in the pressure cooker because they don’t dry out and are moist. This recipe can be modified for the slow cooker or a dutch oven.

You can use canned baked beans or those you have previously prepared in the pressure cooker. 


  • 28 ounces of baked beans
  • 4 pork chops (about 1 inch thick)
  • ½ of chopped onion
  • ½ cup mustard
  • ½ cup ketchup
  • ¼ cup packed brown sugar
  • ¼ cup lemon juice
  • salt and pepper
  • ¼ teaspoon garlic powder
  • ½ teaspoon parsley
  • ¼ cup lemon juice
  • ¼ cup wine

  1. Chop onion  and mix with the beans
  2. Trim fat off of pork chops
  3. Season pork chops on both sides with salt and pepper.
  4. Sear pork chops on both sides in the pressure cooker pot (this will take 2 cookings)
  5. Deglaze the bottom of the pot with the wine.
  6. Spread mustard and ketchup on both sides of seared pork chops
  7. Sprinkle pork chops with lemon juice, sugar, s&p,garlic powder and parsley.



You can leave out the step of searing the pork chops, but personally I think it adds extra flavor.

You can substitute barbeque sauce for the mustard, ketchup, lemon juice, and sugar.

Chicken broth can be substituted for the wine.


Cooking Method:

Place  ½ of the beans on the bottom of the pressure cooker.

Mix beans and wine.

Add 2 pork chops on top of the beans.

Then place the remaining beans on top of the 2 pork chops.

Lastly, place the 2 remaining pork chops on top.

Seal the lid and bring to high pressure. 

Reduce to low pressure and continue cooking for 10 more minutes.

Use the quick release method to get this meal on the table in a hurry and enjoy!
