Banana Bread in the Slow Cooker

banana breadI make banana bread every year at Christmas. It is so handy to have on hand. It can be used for breakfast, dessert, or a snack. With so many people coming and going, there is always someone hungry and this bread seems to fill in the cracks.

It freezes well, so you can make it ahead of time and slice it and then just bring it out as needed. It thaws in the microwave in just a minute. The secret in keeping it moist is to wrap it in a wet paper towel if thawing in the microwave.

Some manufacturers have a bread pan insert. If you don’t have one you can use a metal bread pan or even a meatloaf pan. Just make sure it fits into your slow cooker. You can even make a bread pan out of heavy duty aluminum foil and it works just fine.

However, if you are not using a bread pan that is fitted for the inside of the slow cooker, either place a rack or crumpled up aluminum foil on the bottom of the crockpot to place the container on. Just make sure before you start that the bread pan fits inside of your slow cooker.

This is a great recipe especially if you are already busy using your oven or on a hot day when you don’t want to heat up the kitchen with a hot oven. Turn the slow cooker on high and generously grease and flour the bread container.

banana bread in slow cookerMix the following ingredients together in a small bowl:

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Add and stir in:

  • ½ cup nuts (pecans or walnuts)
  • In a larger bowl cream together:
  • ½ butter, softened
  • 1 cup sugar

Then add in a larger bowl:

  • 2 eggs, one at a time
  • 2 tablespoons plus 2 teaspoons milk
  • 1 teaspoon vanilla
  • 4 small ripe bananas that have been mashed

Add flour mixture into larger bowl by stirring until moistened, do not over mix.

Pour mixture into baking pan and place in the slow cooker.

Cover and cook for at least 2 hours before removing lid. After 2 hours, insert toothpick into bread and check if it’s done. If bread is cooked, remove from slow cooker and let it cool on counter top. If bread isn’t done, replace lid and cook for 30 more minutes.

Two more important things:

Place 2 or 3 paper towels over bread pan while cooking.
The lid on slow cooker should be loose.

Variations:

Many like to add pieces of pineapple which adds moisture to the bread (a small can of crushed pineapple).
Nuts can be left out of the batter. If you are cooking for people you aren’t sure whether or not they are allergic to nuts, it is best to leave them out.
